Hluvukani Cooking School was founded with the vision to develop highly skilled, internationally prepared chefs who are ready to meet the evolving demands of the culinary world. The school is under the expert leadership of Master Chef Maguire, who brings over 37 years of hands-on experience from professional kitchens across the globe—including Qatar, Abu Dhabi, Saudi Arabia, Lesotho, Botswana, Ghana, and the UK.
Chef Maguire’s retirement from international duty has only fuelled his passion for mentorship and culinary education. At Hluvukani, his wisdom, global connections, and commitment to excellence are passed on to the next generation of chefs.

Our Programme
Level 2 Diploma in Cooking
Duration: 18 Months (1 Year Theory + 6 Months Practical Training)
Our flagship programme is a Level 2 Diploma in Cooking, designed to give students a strong foundation in culinary theory, food preparation techniques, kitchen safety, menu planning, and presentation.
Programme Features:
- One year of intensive theoretical and hands-on culinary training
- Six months of local and international practical placements
- Exposure to international cuisines and best practices
- Chef-led mentoring and real-time kitchen simulations
- Theoretical Training: Includes key subjects such as food safety in catering environments, healthy eating principles, and special dietary requirements.
- Operational Knowledge: Covers menu costing, kitchen operations, and basic first aid certification.
- Culinary Foundations: Focuses on mise en place, understanding food commodities, and mastering the preparation and cooking of sauces, stocks, soups, and casseroles.
- Preparation Techniques: Students gain hands-on skills in fruit preparation, various vegetable and fruit cutting techniques, garnishing methods, and buffet display presentation.
- Pastry & Baking Skills: Includes instruction on different cake and pastry baking techniques, as well as the preparation of sugar-based sauces, caramel, fruit-based sauces, icings, and fillings.
